I have solved my own problem with atopic dermatitis. But first, a little theory: 70% of our immune system is in out gut. The reason most attack cells are in the gut is because that is where bacteria and blood are very close. They are separated by a thin membrane, the intestinal wall. When bacteria cross that membrane, they are attacked by those cells. There are many species of bacteria in the gut. Each species specializes in helping digest certain foods. And each food is digested by only certain species. If we eat a monotonous diet, one with very few different foods, then we will not have a lot of species of bacteria in our system. When this is the case, then our immune system is relatively unchallenged. Cell that have nothing to do sometimes turn on their host and attack our tissues. These attacks produce autoimmune diseases of which there are over a hundred. Nutritionists have advised us for a long time to eat a varied diet, and now scientists know why it is important. Variety, of course, is not flavors of ice cream, but many different kinds of fruits, vegetables, grains, legumes, seeds and nuts. Apparently, these foods work best ‘synergistically’. And when I shop at the store, I like to see ‘multi’ on the packaging.
